I spent the past weekend spending a lot of much needed time with my mother. There is something so special about having a built-in best friend like a mom that we tend to take for granted & it important to me that I don't. Lucky for me, Alec & I's house is SO close to both my parents & his!! It is on the same lake and on the same road! People probably think we are crazy, but family is first for us and we couldn't be happier. That also means we will get a lot more days making our parent's signature recipes like today's that I am sharing with you - my mama's kale soup.
If you have been following my blog for awhile, you probably know that I enjoy living a fairly healthy lifestyle. Now I definitely cheat, ALL THE TIME, but I genuinely enjoy eating healthy too!! So this is one of my favorite recipes to prep on a Sunday and eat for lunch or dinner the next couple of days. It's full of yummy veggies and ground chicken giving it a little bit of everything to keep your taste buds happy & your tummy nice 'n full! Head to bottom of post past images for full recipe and details! This recipe is healthy, easy, gluten free, dairy free, and can be made vegan (don't add chicken)! Perfect for any type of lifestyle :)
Olive Oil - 2 Tbs.
2 Cloves of Garlic - Minced
Small Bag of Carrots
4 Cups of Chicken Broth
1 Can Diced Tomatoes
1 Can Garbanzo Beans or Black Beans (you could even do half and half if you want both!)
1 (pick 2-3 of the following, do less of each the more variety you add) Butternut Squash, Zucchini, or Sweet Potato - cut into cubes or small pieces
1/4 Tsp. All Spice
1 Tsp. Salt
1 Ground Chicken
2 cups of Kale
Saute onion, garlic, carrots, and ground chicken in olive oil for 10-15 minutes til chicken is cooked through. Get a separate large soup pot then mix together chicken broth, diced tomatoes, beans, squash/zucchini/sweet potato, spice & salt in it. Put over heat. After just a little bit add in chicken mixture and bring to a boil. Then add your kale, (removing the stems so it's just the leaves). Simmer for 15-20 minutes or until squash/zucchini/sweet potatoes are soft. GRUB UP!
**Karlie tips: I think when I eat mine this week I am going to throw some diced avocado over the top and try it! Everything with avocado is better right?? Also, you can sprinkle cheese over if you are a cheese lover! Sometimes I will season the ground chicken - definitely do that if you are someone who really likes lots of flavor!!
